Nut Butter Fudge

For the Sweet Fix….

This is one of my favourite recipes to have in the freezer for when you just need something sweet. Filled with lots of healthy oils and protein (and a little bit of sweetness). There are so many different recipes for these out there but pretty much all with the same result.

My favourite way is with a crunchy nut butter, then it tastes similar to a peanut slab (haha a treat I used to enjoy with my Dad!!!).

Again play around with the ingredients to suit you. Choose a nut butter/seed butter that suits what your body tolerates - use cacao or carob, your choice of sweetener - even Stevia works… So many options. Have a play around, grate some ginger in there, throw in some chilli, citrus zest (the choices are endless)..

Keeps well in the fridge or the freezer - not a good lunch box option (probably not a problem at the moment in lock down).

1C Coconut Oil

1/2C Nut Butter (choose what you like best - could try seed butter too)

1/2C Cacao Powder

1/2t Vanilla Essence

1/2C sweetner of choice (Honey, Maple Syrup, Coconut Nectar)

(I have used Stevia here as well - Maybe 16 drops)

Put all ingredients except for the Cacao Powder in a small sauce pan, heat over a low heat. Once melted add in the Cacao Powder and whisk well until nice and smooth. Pour into a slice tin and put in the freezer for a couple of hours. When set, break into nice sizes and store in the freezer.
